NV Champalou Vouvray Brut
This extra-brut blend of three vintages comes from Chenin Blanc vines that average 45 years of age. A compelling nose of toast, cream, quince, and stony minerality all but belies the succulence of the round entry, combining bright mango and baked apple that evolve in the mouth toward more savory, streamlined herb- flecked lemon and almond.
The Vouvray Brut grapes are harvested when fully ripe, early in the morning to preserve their quality. Afterward, the must undergoes fermentation in stainless steel tanks, and the wine matures on fine lees before being bottled. A second natural fermentation occurs once the wine is in the bottle, creating its effervescence. Finally, the bottles rest sur lattes for two years before disgorgement. Each cuvée is a blend of three distinct vintages.
